Full Version: Zesty Rice Casserole

4 cups cooked brown rice
1/4 cup chopped onion
2 cups sour cream
1 cup cottage cheese
1 can chopped green chilies
2 cups grated pepper jack cheese
salt & pepper to taste

Preheat oven to 375 degrees.
Spray a 9 x 13 casserole dish with PAM.

Saute onion in a little melted butter until just tender crsip. Remove from heat.

In a large bowl mix together onion, rice, sour cream, cottage cheese and salt & pepper.

Place half of the rice mixture in the bottom of the prepared baking dish.

Layer on half of the chilies & cheese. Repeat layers.

Bake uncovered for 25 minutes.
This sounds similar to Fiesta Rice Casserole in one of the SB cookbooks, but it layers zucchini and tomatoes in there as well. It's very good, but a bit of work for a side dish (in my opinion) unless it's a covered dish dinner we're taking it to. I like QUICK side dishes...usually something I can saute quickly or frozen which I can pop into the microwave. Boring, eh?!
