1/4 cup butter-flavored shortening *
1/2 cup Splenda
1 tsp. vanilla
1 egg
2 Tbsp. vegetable oil
2 Tbsp. milk
3/4 cup whole wheat pastry flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 1/2 cups old-fashioned oatmeal
1 jar all-fruit spread (your favorite flavor)
Cream together shortening, Splenda, and vanilla. Add egg, oil, and milk and mix very well. Add flour, salt, baking soda, and cinnamon and beat well. Stir in oatmeal.
Press slightly more than 1/2 of dough onto bottom of lightly greased 8x8 pan. Spread fruit onto dough. Crumble remaining dough on top of fruit spread. Bake at 350 degrees for 25-30 minutes. YUMMY!
* If you don't want to use shortening, then substitute 1/4 cup butter and leave out the milk.
