1 medium spaghetti squash, cooked
4-5 Tbsp grated fresh ginger
4 eggs
2 Tbsp chopped green onion or chives

Cook the squash the night before. In the morning scrape out the spaghetti squash into bowl.

Add ginger, eggs, and onion or chives.

Form into 3 inch patties in greased hot skillet.

Cook 3-4 minutes on each side.

Serve with soy sauce or Tamari.

Makes 30 pancakes.
