In order for this to be legal, you must use stage 3 or 4 bananas (still have green on them). For the bananas to get the mushy texture needed, peel them, freeze them overnight in a Ziplock bag, then thaw them and mash them. I actually pureed my bananas in the food processor.
Beat until creamy:
1/2 cup butter, softened
1 cup Splenda
Add the following and beat until well-incorporated:
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
Stir in:
2 unripe bananas, frozen, then thawed and mashed
Sift in, then stir well:3/4 cup oat flour
3/4 cup ww pastry flour
2 1/2 tsp. baking powder
1/2 tsp. salt
Stir in:
1/2 cup chopped nuts (I used pecans)
Bake at 350 degrees in a greased and floured loaf pan for 40-45 minutes or until golden brown and toothpick comes out clean. If not eaten within 2 days, wrap tightly, place in Ziplock, and freeze.
