I was eating at a Thai resturaunt the other evening and they had a cucmber salad on the menu. I gave it a try, and basically it was cucumbers, vinegar (probably rice wine vinegar), and sugar.

So, this evening at home I adapted it: cucmbers, a splash of apple cider vinegar (I'm not sure what the sugar count is on the apple cider vinegar?), and Splenda. Tasted just like the resturaunt.
