Yields 4 servings

1 package frozen veggie mix (my fav for this dish is the broccoli, cauliflower, snap peas & red peppers)
1 can vegetable broth
1 cup cooked brown rice
2 tsps curry powder
1/2 tsp salt
1/2 tsp hot pepper sauce
1 good pinch crushed red pepper flakes
1 can unsweetened coconut milk
1 Tbsp fresh lime juice

Combine veggies and broth in a large saucepan. Cover and bring to a boil.

Stir in the rice and seasonings. Reduce heat to medium-low. Cover & simmer for 8-10 minutes.

Stir in the coconut milk and heat through.
Stir in the Lime juice.
Ladle into bowls and serve immediately.

*** whenever I have leftover brown rice I freeze it in 1 cup portions. Then when I want to add it to soup it's all ready.
