1 Tsp Olive Oil
2 medium zucchini (halved lengthwise and sliced thinly)
1 medium eggplant (peeled and chopped)
1 medium onion (thinly sliced)
1/2 tsp ground pepper
1 can NO-Sugar Added Pasta Suace (Hunts has a good one)
4 Tbsp grated Parmesan Cheese
Fresh Parsley
1 box Whole Wheat Couscous


In a large skillet, heat oil over medium heat. Cook the vegetables in the oil until tender and golden - about 15 minutes.

Stir in the Pasta Sauce and simmer for 10 minutes.

Meanwhile prepare the Couscous using the directions on the box.

Scoop the Couscous onto a large platter. Pour the vegetable stew over the Couscous.

Top with Parmesan and some freshly minched parsley
