1 cup dried lentils (rinsed & drained)
1 pkg frozen green beans
2 cup cauliflower florets
1 cup chopped onion
1/2 cup baby carrots cut in half lengthwise
3 cup chicken broth
2 tsps cumin
3/4 tsp ground ginger
1 can chunky tomato sauce with garlic & herbs
1/2 cup dry roasted peanuts

Place lentils in crocpot. Top with Green beans & Caluliflower.

Mix together broth, cumin and ginger in a large bowl. Pour over lentils & veggies.

Cover & cook on low 8-10 hours.

Sir in tomato sauce. Cover an dcook for 10 minutes.

Ladle into bowls and top with a few peanuts.
