16 oz canned black-eyed peas
2 cups chopped tomatoes
1 cup green peppers, chopped
1/2 cup onion, chopped
1/2 cup rice vinegar
2 tsps splenda

Drain black eyed peas & rinse with cold water. Mix with the rest of the vegetables

Stir together the vinegar & splenda and pour over the vegetables and peas.

Toss & chill.
