Barley Pilaf

3 tablespoons butter
1 Large onion sliced
? pound mushrooms, sliced
1 clove garlic minced
1 cup pearled barley
3 cups chicken broth

Melt butter in a skillet. Saute onion 2 minutes, add mushrooms, and saute until golden: add garlic and saute for 1 minute. Stir well. Add barley and stir until golden brown. Add chicken broth, cover and simmer for 30 minutes or until broth is absorbed
