I'm always trying to think up ways to use my George Foreman Grill. I love Mexican food and this worked out great on the GF!

1 teaspoon olive oil
1 1/2 cups chopped green bell pepper
1 cup minced green onions
2 teaspoons cumin
2 cups cooked chicken breast, chopped
1 can diced tomatoes, drained
Juice from one fresh lime
1/4 cup minced fresh cilantro
1/4 teaspoon salt
1/4 teaspoon ground pepper
8 Whole Wheat flour tortillas (I use the Low Carb ones or you can make your own)
3/4 cup shredded Pepper Jack cheese

Fresh cilantro sprigs (optional)

Place oil in a large nonstick skillet over medium-high heat until hot. Add chopped pepper and onion; cook 3 minutes, stirring often. Add cumin, and cook 1 minute, stirring often.

Add chicken and tomato; cook 3 minutes, stirring often.

Stir in minced cilantro, lime juice, salt, and ground pepper.

Spread a tortilla with the chicken mixture. Sprinkle cheese on top. Then place another tortilla on top . Brush with a little olive oil.

Lay the quesadillas flat on the grill, close the lid & grill until the cheese is melted and they are lightly browned.

Repeat with the remaining 6 tortillas.

Garnish with cilantro sprigs, if desired. Serve immediately.
Serves 8.

NOTES: To do this on the stove---Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add a filled tortilla; cook 30 seconds on each side or until lightly browned. Set aside, and keep warm.
