Sources: Worthy of Your Best Sauce

OF the more than 35 pastas I tried, these are the best.

In the context of pasta, bland and neutral are not necessarily pejorative. And the color has no correlation to the fiber content. For that information look at the nutrition label.

All were cooked according to package directions, but were first tested in slightly less time than recommended. Cooking was continued as needed, to ensure the pasta was not too firm or gummy. Home cooks may want to do the same.

Flat Whole-Wheat Pasta

All with 5 to 7 grams of fiber, 180 to 210 calories per 2-ounce serving.

BIONATURAE fettuccine is tender and good; its spaghetti is good and more toothsome. Both are organic.

DE CECCO linguine is toothsome and good.

PASTA RISCOSSA linguine is nicely toothsome; a bit nutty.

WESTBRAE organic spaghetti has good texture.

LA TERRA E IL CIELO organic capellini is neutral, with good texture.

WESTBRAE organic lasagna has nice flavor and O.K. texture.

ANNIE'S organic spaghetti is good but not as smooth as others.

Other Flat Pasta

With 2 or 3 grams of fiber, about 200 calories per 2-ounce serving.

EDEN buckwheat soba is pleasant and neutral for buckwheat.

TINKYADA brown rice spaghetti style (with rice bran) tastes like Asian rice noodles; good and firm and definitely not whole wheat.

TINKYADA brown rice lasagna (with rice bran) has texture that is not as good as its spaghetti but is acceptable.

Whole-Wheat Shaped Pasta

With 5 or 6 grams of fiber and about 200 calories per 2-ounce serving.

BIONATURAE organic fusilli has good texture.

HODGSON MILL elbows have good texture.

LA TERRA E IL CIELO farro penne, which is organic, has texture that is among the better ones.

Other Pasta Shapes

TINKYADA brown rice elbow with rice bran (2 grams fiber and 210 calories) tastes like rice noodles; firm enough.

EDEN kamut spirals, which are organic and have 6 grams fiber and 190 calories, have a neutral taste.
