1 box whole wheat couscous
1 1/2 cups beef broth
2 teaspoons olive oil
1 1/2 teaspoons cumin
1/2 teaspoon coriander
1/2 teaspoon oregano
1 tablespoon dried minced onion
1/2 teaspoon mexican chili powder
1 can diced tomatoes & chilies (I like Rotel in this)
1 cup canned black beans rinsed
2 Tbsp chopped cilantro

Bring beef broth, olive oil, tomatoes and spices(except for the cilantro) to a boil.
Add couscous, black beans & cilantro, stir, remove from heat and cover.
Let stand 5 minutes, fluff and serve.
