1/4 cup minced onion
1 tablespoon olive oil
1 teaspoon minced garlic
2 teaspoons lemon zest
1 small bayleaf
1 1/3 cups whole wheat couscous
1 3/4 cups chicken broth
1 tablespoon fresh lemon juice
pepper to taste

In a medium sized saucepan, over medium heat, saute the onion in the olive oil until the onion is transluscent.

Add the bayleaf, pepper & chciken broth; bring to a boil.

When mixture is boiling, stir in the couscous & remove from the heat.

Cover & let rest for 5 minutes. Remove bay leaf.

Fluff with a fork.

Makes 3 1/4 cups pilaf
