Full Version: Philly Cheesesteak Meatloaf

MEATLOAF
? cup chopped onion
? cup chopped green or red bell peppers, or combination
2 cloves garlic, minced
2 teaspoons olive oil
1 ? pounds lean ground beef
? cup old-fashioned oats, uncooked
? cup tomato sauce
1 egg, lightly beaten
1 teaspoon salt
? teaspoon black pepper
3 slices provolone cheese, cut in half

TOPPING
1 large onion, sliced thinly
1 large green or red bell pepper, or combination, sliced thinly
? teaspoon salt
1 tablespoon olive oil


Heat oven to 350 degrees.

For meatloaf:cook onion, green pepper and garlic in oil in medium skillet until tender.

In large bowl, combine ground beef, oats, tomato sauce, egg, salt, pepper and onion-pepper-garlic mixture. Mix lightly but thoroughly.

Shape mixture into 8-by-5-inch loaf on rack of broiler pan.

Bake in preheated oven 50-55 minutes or until center of meatloaf registers 160 degrees on instant-read thermometer.

Arrange cheese on top of loaf, overlapping slices, and bake additional 5 minutes or until cheese has melted.

Let meatloaf stand 5 minutes before cutting.

For topping, cook sliced onion, sliced peppers and salt in oil until tender.

To serve, cut meatloaf into slices and arrange slices on plate, topped with onions and peppers.

Gotta say, another hit!
This is a really good meatloaf!
I have been eating it for a few days, and will finish it tonight, with some garlic mashed sweet potatoes, and steamed green beans.
Oh how I miss gravy!

Glad you liked it. Its one of my favorites too.

You can make gravy ya know... just use WW flour for the thickener or Arrowroot.

I had thought about that, (gravy with wwf) next time.

I also, couldn't get Provolone last week, so I used Swiss. It was great.

You don't have to miss gravy anymore. It's soooo easy to make gravy with whole wheat flour. You just need butter or margarine and make a rue with the whole wheat flour, letting it marry for a few mins (3 mins or so). Add milk to consistancy you like and continue stirring, you'll see when it has blended and cooked enough and add a little salt or chicken or beef bouillion to it for even more flavor. No more missing gravy! smile.gif
