Chiles Rellenos Casserole
1 lb. ground beef
1/2 onion, chopped
Seasonings- salt, pepper, garlic powder and hot pepper sauce, to taste
2 1/2 c shredded cheddar
3 (4 oz.) cans WHOLE green chiles
4 eggs
1 1/2 c milk
1/4 c whole wheat flour
Picante sauce

Preheat oven to 350 degreeas. Spray a 8" or 9' square pan with nonstick spray. Brown meat and onion. Drain fat. Add seasonings. Slice open chiles. Remove seeds. Flatten chiles and arrange half of tehm in pan. Top with half of the cheese and all of the meat mixture. Place remaining chiles and cheese. Place eggs, milk and flour in a bowl and beat with a fork. Pour over casserole. Bake uncovered for 45-50 minutes. Serve with picante sauce.
