Full Version: Quick Chicken Dish

1 whole chicken or 6 chicken breast halves cooked and diced into 1" pieces
1 1/2 c coarsely chopped celery
1 c mayo
1/4 c milk
1 c sharp cheddar, grated
1/2 slivered almonds, toasted
4 oz. jar pimentos, chopped
2 T sherry
1/2 chopped onion
1 t basil
whole wheat bread crumbs for topping (optional)

Spray a shallow casserole dish with nonstick spray. Mix all ingredients.
Top with bread crumbs, if desired. Bake at 350 for 30 minutes.

I'd guess 6-8 depending upon what else you're serving.
