Elegant Chicken and Mushrooms
16 oz. whole wheat spaghetti
2 t butter
2-3 boneless, skinless chicken breasts, sliced into 1" strips
2 small shallots, finely chopped
8 oz. fresh mushrooms, sliced
2 T dry sherry
1 c half and half
1/2 t salt
1/4 t pepper
4 sprigs freshly minced parsley

Preapre pasta according to package directions. While pasta is cooking, melt butter over med heat in a large nonstick skillet. Add chicken and shallots and saute until chicken is tender (about 7 min). Stir in mushrooms and sherry; cook approximately 5 min, stirring occasionally. Add cream and simmer until sauce thickens, stirring occasionally until sauce thickens. Garnish with salt, pepper and parsley. Serves 6-8
