This is really simple, and good, too. I like with with crumbled bleu cheese in the salad, though that adds a lot of fat.

1/2 cup olive oil - use the good stuff, extra virgin
1 tsp salt
1/2 tsp black pepper
2 Tbs vinegar - usually apple cider, but can use others
1/4 tsp sugar - that's in the recipe, either omit or use sweetener
1/2 tsp Italian seasoning (optional)
1 clove garlic, sliced part through, add for flavoring, don't serve

Mix, chill, remove the garlic after the first day if you want to save extra.

Quantities approximate, you can mix and match at will and not go wrong.
