Scrambled Tofu Rancheros
Heat in a skillet:
1 T olive oil

Stir in:
1 clove garlic, minced
1 small onion, chopped
3-4 fresh green chiles
1/2 t tumeric
1 pound medium curd regular tofu (packed in water), drained, but don't press the water out

Cook and stir for about 5 min.

Stir in
1 large tomato, chopped
2 T chopped fresh cilantro
1 t salt

Stir and cook until tofu starts to brown and most of the liquid is out, but not totally dry. Serve with salsa and whole wheat tortillas. 6 servings
