I love gazpacho. It's one of my favorite hot weather treats. An icy cold bowl of gazpacho with a platter of rye crackers and slices of cheese on the side... mmmmmm...YUM!

There are probably as many recipes for Gazpacho as there are cooks. This streamlined version of mine is pretty simple to make and a delicious way to get in your Lo-GI veggies.


2 cups tomato juice
1/2 small cucumber, peeled and chopped
1 tomato, chopped
1/2 green pepper, chopped
1 tsp. green onions, minced
1 tbsp. fresh parsley leaves, minced
1 small garlic clove, minced
1 tbsp. fresh basil leaves, minced
2 tsp. red wine vinegar
1 tsp. sweetener
1 tbsp. lime juice
salt to taste
dash of Tabasco sauce

Place all ingredients in a blender and puree. You may have to do this in batches.
Chill.
