This is so colorful. I like to serve it on lettuce lined plates and garnish with a bit of parsley.

2 (3 oz) cans sliced black olives, drained
6 large cucumbers, peeled
10 Roma tomatoes
3 small red onions
1 (12 oz) bottle creamy Italian dressing (the lowest sugar you can find)
1 tbsp dry Italian seasoning
2 tsp dried oregano
? tsp garlic powder
? tsp salt
? tsp pepper

Cut cucumbers and tomatoes in half. Remove seeds and chop into chunks.

Thinly slice onions and separate into rings. Add olives.

Mix the salad dressing with the dry seasonings.

Add to veggies and toss to coat. Cover, chill and let marinate for several hours.

Excess liquid may be drained off prior to serving. (and I suggest having lots of breath mints handy- SF of course)
