This serves appx 8 people. I could eat it every night!

Salad:
• 1 head romaine lettuce, washed, drained and torn
• 2/3 (15 ounce) can pitted black olives, drained
• 1 14 ounce can quartered artichoke hearts, drained
• 3 roma tomatoes, chopped
• 1/4 red onion, thinly sliced
• 1/4 cup crumbled blue cheese
• 1 avocado, sliced

Dressing:
• 1/2 cup extra virgin olive oil
• 1/4 cup apple cider vinegar
• 1 garlic clove, minced
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper

Place the cleaned lettuce into a large bowl.

Top with the rest of the salad ingredients.

Make dressing by tossing all of the ingredients in a food processor and blend or in a small bowl and whisk until well blended.

Pour dressing over salad; toss.
