This serves appx 8 people. I could eat it every night!

Salad:
? 1 head romaine lettuce, washed, drained and torn
? 2/3 (15 ounce) can pitted black olives, drained
? 1 14 ounce can quartered artichoke hearts, drained
? 3 roma tomatoes, chopped
? 1/4 red onion, thinly sliced
? 1/4 cup crumbled blue cheese
? 1 avocado, sliced

Dressing:
? 1/2 cup extra virgin olive oil
? 1/4 cup apple cider vinegar
? 1 garlic clove, minced
? 1/2 teaspoon salt
? 1/4 teaspoon black pepper

Place the cleaned lettuce into a large bowl.

Top with the rest of the salad ingredients.

Make dressing by tossing all of the ingredients in a food processor and blend or in a small bowl and whisk until well blended.

Pour dressing over salad; toss.
