I love salads just about any old time ... but on those sultry summer days when you don't want to heat up the kitchen and it's so muggy that your appetite sags salad becomes an easy and healthy dinning option.

I posted a few of my fav salad recipes this morning. But I know you all must have some yummy salad secrets to share too. How about posting your favorite summer salad recipes & tips?

We did just that the other night. I had prepared a whole chicken in the crockpot the other night for dinner, then the next night we chopped up the rest and put it over a fresh salad of red leaf lettuce, and nearly every vegetable you can think of that goes into a salad...yellow squash, bell pepper, carrots, celery, mushrooms, cucumber, tomatoes... The kids loved it, it was filling, and very healthy!! And best of all, I didn' have to heat up the kitchen! cool.gif

I've got a Dutch Pea Salad I'll try to post soon. Very easy, and VERY yummy!
