We did just that the other night. I had prepared a whole chicken in the crockpot the other night for dinner, then the next night we chopped up the rest and put it over a fresh salad of red leaf lettuce, and nearly every vegetable you can think of that goes into a salad...yellow squash, bell pepper, carrots, celery, mushrooms, cucumber, tomatoes... The kids loved it, it was filling, and very healthy!! And best of all, I didn' have to heat up the kitchen!
I've got a Dutch Pea Salad I'll try to post soon. Very easy, and VERY yummy!
