Full Version: Zucchini Casserole

4 cups zucchini, sliced
2 cups boiling water
2 eggs
3/4 cup mayonnaise
1 onion, chopped
1/4 cup chopped green pepper
Salt and pepper
1 cup grated Parmesan cheese
1 tablespoon butter
2 tablespoons WW bread crumbs (I sometimes use crushed Triscuits)

Cook zucchini until just tender, drain.

Beat eggs, add mayonnaise, onion, green pepper, cheese, salt and pepper.

Add zucchini.

Turn into greased baking dish. Dot with butter and sprinkle with bread crumbs.

Bake at 350 degrees for 30 minutes.
Molly this sounds good. I love zucchini. but I was wondering if it would still taste right if you substitute the parmesan cheese for shredded chedder cheese? My husband doesn't like parmesan cheese?????????????

I think the texture would be completely different but it still might work. Give it a shot!
