EZ Chicken Chop Suey

1 cup celery -- sliced
1 onion -- chopped
2 tablespoons canola oil
1 1/4 cups chicken broth
1 tablespoon arrowroot powder
1 small green pepper -- in thin strips
2 cups chicken -- cooked & cubed **
1 can bean sprouts -- (16 oz.) drained
1 can waterchestnut, canned --(5oz.) drained, sliced
2 tablespoons soy sauce

Cook celery and onion in vegetable oil for 3 minutes.

Add 1 cup chicken broth, mix arrowroot with remaining broth.

Blend into skillet with green pepper, cook just until thick.

Add remaining ingredients, heat through.

**Molly's Note: When I grill a chicken breast for myself I usually throw on an extras one or two so I have cooked chicken already available for other recipes like this one.

Per Serving: 300 Calories;18g Protein;10g Carbohydrate; 2g Dietary Fiber

NOTES : Serve with steamed brown rice.
