Arroz con Huevos
1 tbsp vegetable oil
3/4 cup chopped onion
3/4 cup chopped green pepper
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3 cups cooked brown rice
Hot pepper sauce, to taste
4 eggs

Heat oil in deep non-stick skillet or Dutch oven over medium heat. Add onion and green pepper; cook, stirring until onion is soft, about 6 minutes. Stir in garlic and tomatoes; cook 1 minute.

Stir in cooked rice and hot pepper sauce; heat through.

Poach or fry eggs in separate pan, to desired doneness.

Spoon rice onto plate and top with eggs. Serve with hot pepper sauce, if desired.
