Garden Soup

4 T. Butter or Olive Oil
4-6 Zucchini and/or Summer Squash, sliced
2 Leeks, cleaned well and chopped
2 stalks Celery, coarsely chopped
1 lg. Onion, diced
1 lg. Red Bell Pepper, diced
3 Garlic Cloves, minced
16 oz. Chicken Broth
1 can V-8
2 t. Italian Herbs
1 t. each Garlic Salt, Salt and Pepper

Saut? all vegetables in butter, set aside. In pot, combine chicken broth,V-8, herbs and seasonings.

Bring to a soft boil, add vegetables, cover and let simmer 20 minutes or until vegetables are tender.
