Vidalia Onion Pie
2 1/2 cups thinly sliced vidalia onions
2 Tbl olive oil
2 eggs
1/2 cup heavy cream
salt and pepper to taste
1 cup shredded swiss cheese
Saute onions in oil in skillet until tender. Spread in pie plate.
Combine eggs, cream, seasonings in bowl; mix well. Spoon over onions.
Top with cheese.
Bake for 30 minutes in 350 oven.

Being from Georgia, where Vidalia onions are grown, I just have to tell you, this receipe is awesome! I fixed it twice last week, once at home and then I carried it in to work to let some of my fellow southerns try it, They were very surprised at how good it tasted and how good for you it was. Thank you! Thank You! Thank you!
You should be the next food network star, or the SB people should add you to their payroll as head chef.
