All Weather Broccoli Soup

4 cups chopped broccoli
2 cups chicken broth
1 small onion -- quartered
1 clove garlic -- halved
1 teaspoon lemon juice
Lemon slices to garish if desired

In a large sauce pan, saute onion and garlic in a little olive oil until tender.
Add broccoli and broth. Continue to cook on medium high heat until the broccoli is tender (about 10-15 minutes).

Transfer to blender in batches and puree until smooth. Return to pan.

Add lemon juice and season with salt and pepper.

Cook until heated through. Ladle soup into bowls and garnish with lemon

NOTES : Soup can also be served cold, garnished with plain yogurt.
