Sausage and Spinach Soup

1 pound mild Italian sausage ( I cut open the casing on the sausage and crumble the meat inside- you can use turkey sausage if you prefer)
28 ounce canned small diced tomatoes
6 ounce tomato paste
6 ounce frozen spinach
1/2 cup brown rice
1 medium onion, chopped
1 Tbl olive oil
1/2 tbl butter
8 cups chicken broth
salt and pepper
shredded mozzarella cheese

Saut? onion in oil and butter till soft. Add sausage meat and stir fry till no longer pink on outside.

Add tomato paste and cook for 2 minutes, stirring constantly.

Add broth and spinach bring to a boil. Add canned tomatoes and rice. Reduce to a simmer and cook for about 30-35 minutes or until rice is done.

Serve with shredded mozzarella cheese sprinkled on the top.
