Garlic-Parsley Tea Sandwiches
2 bunches parsley, finely chopped
2 cloves garlic, fresh, pressed
1/2 cup mayonnaise
1 loaf whole wheat sandwich bread
Combine parsley, garlic and mayonnaise; mix well.
Spread mixture between two slices of bread (crusts removed) and cut diagonally each way to make four finger sandwiches.
Refrigerate until ready to use.
molly's note: These can be made early on the day to be used, but not the day before. They will get soggy if left sitting too long. I invited an English friend to "high tea" once and she adored these little sandwiches. They are great for teas or baby or wedding showers.
