Spicy Cajun Stew
1 pkg. (16 oz.) smoked sausage or kielbasa
2 cans (10 oz. ea.) diced tomatoes and green
chilies, undrained
1 can (14 1/2 oz.) chicken broth
1 pkg. (10 oz.) frozen chopped spinach, thawed
and squeezed dry
1/2 to 3/4 c. cooked brown rice
In soup kettle, sauté sausage until lightly browned; drain.
Add tomatoes and broth.
Bring to a boil.
Stir in spinach. Return to a boil; cook for 2 mins.
Stir in rice; cover and remove from heat.
Let stand for 5 mins. Stir with a fork.
Makes 5 servings.
