Onion Lover's Casserole

You don't even have to love onions to love this dish!

1 lb. ground beef
3 large onions, sliced
1 green pepper, chopped
1 can of tomatoes (28 oz)
1/2 cup uncooked brown rice
1 tsp. chili powder
1 tsp. salt

Heat oven to 350 degrees F.

In a large skillet, cook and stir ground beef until light brown. Drain off fat.

Add onions and green pepper.Cook until onion is tender.

Stir in tomatoes, rice, chili powder, and salt.

Pour into a 2-quart casserole dish.

Bake covered for 1 hour or until rice is done.

*** If there is not enough juice from the tomatoes to properly cook the rice you can add a little water.
