Cashew Rice
1 teaspoon fresh ginger -- grated
1/2 cup cashews
2 Green onions -- sliced
1 clove Garlic -- minced
2 cups hot cooked brown rice
1 teaspoon olive oil
In a large skillet, saute garlic in olive oil.
Stir in hot cooked rice, stir in grated ginger, green onion and 1/2 cup cashews.
