Baked Catfish

4 catfish or ocean perch fillets (1 lb. total), thawed
2 slices whole wheat bread, crumbled
2 T. grated Parmesan cheese
1 t. oregano or basil
1/2 t. salt
1/4 t. pepper
1 egg beaten
1/4 C. buttermilk

Preheat oven to 400.

In a pie pan or shallow dish, mix the bread crumbs, cheese, basil or oregano, salt and pepper. Set aside.

In another dish, combine the egg and buttermilk. Dip each fish fillet first in the milk mixture, then in the crumb mixture to coat both sides with crumbs.

Arrange the fillets in 1 layer in a 9x13 baking dish.

Bake 15-20 minutes until the fish flakes easily with a fork.
