Deep-Fried Green Beans

1 pound green beans, trimmed
4 cups peanut oil for frying
3/4 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 cup water
2 large eggs

Cook beans in large pot of boiling salted water until crisp-tender, about 2
minutes. Drain. Cool in bowl of ice water. Drain again.

Heat oil in deep fryer or large saucepan over medium-high heat to 350 F.

Combine flour, 3/4 cup water, eggs, baking powder, 3/4 teaspoon salt, and pepper in large bowl; whisk until smooth batter forms.

Dip 6 beans at a time into batter; shake off excess. Add to hot oil and fry until golden brown, about 4 minutes per
batch.

Using slotted spoon, transfer to paper towels to drain. Sprinkle with more salt if desired, and serve hot.


mollys note: I like to serve these with a little ranch dressing for dipping.

So even though this is fried, it's healthy? Of course in moderation ...

I'm thinking this might be a GREAT treat for my SO and perhaps placate him when he's missing fried foods... but because there's always such a "bad note" attached to "fried" I hesitate ...

Peanut Oil is relatively healthy as is Coconut Oil (coconut oil got a lot of bad press from the soybean industry but its not the villian the lobbists would like you to think it is.).

I don't think an occasional fried treat in a good-for-you-oil is going to be a problem. Like you said- "in moderation".
