I found this recipe on the internet and doctored it to meet my needs. It's SO good that I had to quit making it because I wasn't able to control my portions, but y'all will have better luck, I know it smile.gif The only problem is the dried fruit, just go light or consider chopping up some LEGAL chocolate candy instead. On the up side, it's fairly high in fiber. Let me know what you think if you make it!

CHEWY GRANOLA BARS

1 cup sugar-free maple flavored syrup
2/3 cup chunky natural peanut butter (Smuckers is best)
2 2/3 old-fashioned (whole grain) rolled oats
1 cup whole wheat flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup wheat germ
2 cups mixed dried fruit and nuts, chopped
*may substitute 1/4 cup soy protein powder for 1/4 cup of fruit and nuts

Mix syrup and peanut butter until well blended. Stir in oats, flour, wheat germ, spices and fruit/nut mixture. If mixture is too dry, add water 1 tsp at a time, if mixture is too sticky, add oatmeal 1 tsp at a time. Mixture should be slightly sticky but still spread easily in a pan with greased fingers.

Press into a lightly greased 9-in. x 13-in. pan. Bake at 350 degrees until barely browned. Do not overbake! Cut in pan while still warm.

Cool in pan. Wrap individually in plastic wrap and then store in a zip bag or airtight container. May be frozen.
