Whole Wheat Banana Nut Bread with Agave Nectar

1/3 cup Vegatable Oil
1/2 cup Agave Nectar *I used the darker one*
1 Teaspoon Vanilla extract
2 eggs
1 cup mashed Banana *I used three...not quite ripe ones*
1 3/4 cup Whole Wheat Flour
1/2 Teaspoon Salt
1 Teaspoon baking soda
1/4 cup HOT WATER
1/2 cup chopped nuts *walnuts are good, or pecans*

Preheat oven to 325
In a large bowl, beat oil, agave. Add eggs and mix well. Stir in banana's, vanilla. Stir in Flour and salt. Add baking soda to hot water, stir then add to batter. Blend in chopped nuts. Spread into greased 9x5 loaf pan.
Back 55-60 minutes. Cool on wire rack 1/2 hour before slicing.

*I also used 2 tbls of spenda because I didn' tknow how sweet it was going to taste.. it didn't need it. The agave worked great!!!!

I love Agave for baking. Its a bit pricey but the flavor is wonderful. It doesn't give you that sickly sweet sort of taste.
I use the dark agave to replace molasses and the light to replace honey in recipes.

I bet you could sub applesauce or mashed sweet potatoes in this for a different taste. Sounds good!
