I was craving something with curry tonight and threw this together with what I had on hand. It was delicious! I just sipped it piping hot out of a mug.
3 Tbsp oilve oil
1 medium onion chopped
1 can chicken broth (use vegetable broth if you want this to be a vegetarian dish)
2 cups water
16 oz red lentils
1 can diced tomatoes (you could use fresh but I was out - crushed canned tomatoes woud be good too)
14-oz can coconut milk
2 cloves garlic minced
1-inch piece of fresh ginger peeled and minced (more if you want it to have a kick)
1/3 cup cilantro chopped
2 tsp curry powder
1/2 tsp salt
Saute onions in olive oil until tender.
Place onions and all ingredients except coconut milk in a crockpot. Cook on low for 6-8 hours.
Stir in coconut milk during the last 30 minutes.
Puree in a food processor or blender. I used my immersion blender and pureed it right in the crock pot.
