Full Version: Berry No-bake Cheesecake

I made this recipe using blackberries and blackberry all-fruit spread, but really any type of berries and all-fruit spread can be used. Also, I used the sugar-free Cool Whip, although I know that real whipped cream would have been a much better choice! Everybody loved it!

CRUST:

1 c. finely crushed Triscuits
1 c. finely ground pecans (almonds or walnuts would work well also)
3 Tbsp. Splenda
6 Tbsp. butter

Mix all ingredients well and press firmly in bottom of 9x13 pan. Put in freezer while preparing filling.

FILLING:

4 (8 oz) pkgs. cream cheese
2/3 c. Splenda
1/2 c. all-fruit spread
2 c. mashed berries, drained (add a Tbsp. or 2 of Splenda if not sweet enough)
1 tub sf Cool Whip (or use real whipped cream)

Thoroughly beat cream cheese and Splenda. Add all-fruit spread and mix in thoroughly. Stir in berries until well-mixed. Fold in sf Cool Whip (or whipped cream). Spread over crust. Refrigerate for at least 4 hours (overnight is better).
