6 slices Canadian bacon or turkey ham
6 slices Swiss cheese (1 oz. each)
12 eggs
1/4 cup heavy whipping cream
Pepper to taste
Dash paprika
Grated Parmesan cheese
English muffins, optional
Preheat oven to 450.
Spray 6 large ramekins or custard cups with cooking spray.
Place 1 slice Canadian bacon in bottom of each ramekin.
Top with 1 slice Swiss cheese. Gently crack two eggs on top of cheese.
Pour 1 T. of the cream into each ramekin.
Bake for 8 minutes, or until egg whites are firm. Yolks may be soft. Sprinkle with pepper, paprika, and Parmesan cheese.
Serve with toasted Whole Grain English muffins if desired.
