Chicken Vegetable Alfredo Soup
About 4 servings
1 cup chopped broccoli
1 14 oz can chicken broth
½ cup chopped carrots
2 cups diced cooked chicken
½ cup chopped onion
1 tablespoon snipped basil
½ cup diced bell pepper (I prefer red)
1 16 oz jar Alfredo sauce
1 clove garlic, chopped
grated parmesan cheese
Put vegetables in soup pot, add broth and bring to a boil.
Cover, reduce heat to medium and simmer 5 minutes or until
vegetables begin to get tender.
Add chicken, basil and Alfredo sauce.
Simmer for 5 minutes.

Hi Molly,
This soup sounds wonderful but I do question the carrots. I am fairly new to this woe but I thought carrots were illegal.

Carrots were retested a few years back and found to be OK in moderate portions. There is only half a cup in the whole recipe so it should be fine.

Sally ... 1st ... welcome to the Board!
I love soup especially in teh winter. I made a crock pot full of Ham and Bean soup yesterday and will eat off of it all week I imagine. Glad you enjoyed teh Alfredo soup. Its one of my favs.
