I wanted to create a recipe that would satisfy my pizza cravings but be quicker than making up a yeast pizza dough and still be on plan. I think I did it! This is really good. tongue.gif

2 cups mozzarella cheese, shredded
1 pound ground beef
1 small onion, chopped
1 small green pepper, diced fine
3/4 cup whole wheat pastry flour
1/2 cup ground flax seed
1 tsp salt
1 tsp Italian seasonings
2 eggs
2/3 cup half & half (could use lo-fat milk if preferred)
1 jar pizza sauce (use the lowest carb you can find)

Lightly brown the hamburger, onion & green pepper.
Combine flour, ground flax seeds, Italian seasoning, salt, eggs and half & half to make a soft pourable batter. (easy & quick to just throw it in the blender)

Pour the batter in a greased 9 x 13 baking dish.
Sprinkle with browned meat and veggies.
Bake at 400 degrees for 15 minutes.

Remove from oven and spread pizza sauce over the crust. Sprinkle with cheese.
Return to the oven and bake an additional 10-15 minutes.

molly's notes: make sure you grease the baking dish well. I thought I had but the crust still stuck a little. Also I didn't have any Parmesan and I would have topped the cheese with some Parmesan if I did.

You could swap out the ingredients for different types of pizza. I am thinking of making one with a ranch sauce and chicken and red onions.

You could also omit the flax and use a full cup of flour but I wanted the extra fiber.
