Asian Chicken Tenders

1 lb boneless skinless chicken, sliced into thin strips (tenders)
1/4 cup canola or peanut oil
1 small can bamboo shoots
3 celery stalks, diced
3 carrots, diced
1 medium onion, diced
6 oz. snow pea pods
1 tsp. ginger
1 garlic clove, minced

Heat oil in a medium skillet over medium heat. Place chicken in skillet and brown on both sides. Remove from skillet.

Place vegetables, ginger, and garlic in the skillet and saute until tender. Return chicken to the skillet and continue to cook until chicken is cooked thru.
