I got this off another forum. It calls for cooked spaghetti squash, I have never tried spaghetti squash, so I used Zucchini. It was very good. My husband told me that was the best way he likes zucchini fixed so far.

Zucchini- shredded ( I just cut mine up in strips)
1 1/2 cups of cheddar cheese
2 Tbsps of finely chopped onion
1/4 cup of sour cream
salt and pepper to taste.

Place mixture in a small casserole dish, and bake at 350 for 45-60 minutes uncovered.

It does taste like hash brown casserole.
