I got this recipe from the Suzanne Somers "Somersized Desserts".

2 cups whipping cream (I've also used heavy cream in a pinch)
1 teaspoon vanilla
sweetener to equal 2 tablespoons of sugar (or to taste)

With an electric mixer, whip the cream until it starts to thicken. Add the vanilla and sweetener. Continue whipping until soft peaks form.

Makes about 3 cups.
