1 lb. ground beef
1/2 c minced onion
2 cloves of minced garlic
2 cans of black-eyed peas with jalepenos
2 c cooked rice
1 can tomatoes, drained
1 T butter
salt and pepper to taste
1c grated sharp cheddar
Brown beef with garlic and onion. Stir in remaining ingredients. Bake at 350 degrees for 20-25 minutes.
*Add a little cayenne pepper if you like things spicy.
