Beef Cassoulet

1 1/4 pounds boneless top sirloin beef steak
1 tablespoon olive oil
? teaspoon salt
? teaspoon pepper
1 ? teaspoons olive oil
2 Stalks Celery -- cut into 1/4" Slices
1 tablespoon Garlic Minced
2 small onions -- each cut lengthwise into 8 wedges
8 ounces cremini or button mushrooms -- quartered
? cup dry red wine
1 can small white beans -- (16-ounce) rinsed, drained
1 can diced tomatoes -- (14 ?-ounce)
1 cup V-8? vegetable juice

In large nonstick skillet, heat 1 tablespoon oil over medium-high heat until hot. Stir-fry beef in 2 batches, 1 to 2 minutes each, or until outside is no longer pink. Remove from skillet. Season with salt and pepper.

In same skillet, heat 1 ? teaspoons oil over medium heat until hot. Add celery and onions. Stir-fry 5 minutes or until crisp-tender.

Off the heat, stir in mushrooms, V-8 Juice and wine. Continue stir-frying 5 minutes. Stir in beans, garlic and tomatoes. Continue cooking 3 minutes.

Return beef to skillet. Cook 2 minutes or until just heated through.

NOTES : This shortcut recipe for cassoulet is ready to enjoy in about 30 minutes, an inviting option for those who love the French classic but not the traditional long preparation.
